We love verdelho at this time of the year. It`s such a crowd pleaser with a tropical fruit drive and crisp dry finish. It sits happily amongst those who love something fruity, and those who love their wine crisp and dry. It`s food friendly, pairing perfectly with so many summery dishes, and is perfect for summery holidays by the beach or pool.

A sneak peak at Chef Paula`s Christmas lunch......
"Christmas lunch in my family usually starts with champagne and freshly shucked oysters with a classic French eschalot vinaigrette.
There is always a whole baked ham on the table which I have made a few days beforehand, my favourite glaze being orange marmalade and Drambuie liquor.
The main event is usually stuffed porchetta as my partner farms pigs. Stuffing for the pork usually consists of festive flavours such as cranberries or red currants and the pork is usually glazed with a reduction of the fruits. Also, on the table, there are always lots of leafy colourful salads and super crunchy roast potatoes, relishes, and French mustard.
For dessert, I always make a pavlova with seasonal fruits. I make the pavlova base the day before and then when it comes to serving it, it’s a team effort with all the kids decorating the pavlova and presenting it to the table".
