Winemaking Notes:

The Pinot was 100% Hunter Valley Estate grown, 25% hand-harvested, whole bunch into the bottom of the fermenter. Machine harvested fruit crushed on top of whole bunches. 8-day fermentation with hand plunging 3 times daily to gently extract colour and tannin.
